Bake a gingerbread and win a FarmCamps weekend!

Last summer, Amanda from Healthiness Online stayed at FarmCamps Hoeve Luyterheyde. Inspired by the outdoor lifestyle and the calm of the farm, she headed into the kitchen and created a wholesome twist on classic gingerbread. Perfect with a cup of coffee or tea, as a snack, or in the kids’ lunchboxes. Why choose wholesome gingerbread?

Gingerbread is often seen as a “responsible” snack, but did you know that one slice can easily contain 13 grams of sugar? That’s about three sugar cubes. This causes a quick spike in your blood sugar, followed by an energy dip – not ideal when you have an active (farm) day ahead.

A good snack should provide lasting energy and keep you feeling satisfied. That’s why Amanda developed this wholesome gingerbread, sweetened with dates and apple syrup. Just as tasty, but a much more conscious choice.

Recipe: Amanda’s wholesome gingerbread

Ingredients (for 12 slices):

  • 250 g wholegrain spelt flour
  • 200 ml milk
  • 6 Medjool dates (pitted)
  • 2 tbsp 100% apple syrup or apple-pear syrup
  • 2 large eggs
  • 2 tbsp gingerbread spice mix
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • ½ tsp vanilla (from a vanilla pod) or vanilla powder
  • Pinch of sea salt
  • Optional: flaked almonds

Instructions

  1. Preheat the oven to 180°C (356°F).
  2. Soak the Medjool dates in warm water for about 5 minutes.
  3. In a large bowl, mix the spelt flour, gingerbread spices, cinnamon, baking powder, vanilla, and sea salt.
  4. Drain the dates.
  5. Place the dates in a blender or food processor and add the milk, apple syrup, and eggs. Blend until smooth.
  6. Add the wet mixture to the dry ingredients and mix well.
  7. Line a loaf tin with baking paper (or grease it) and pour in the batter.
  8. Optional: sprinkle with flaked almonds.
  9. Bake for about 40 minutes until golden and cooked through. Let cool and slice into 12 pieces. 

Variation tips

  • Dairy-free: use unsweetened plant-based milk
  • Gluten-free: replace spelt flour with buckwheat flour
  • No vanilla at home? No problem, simply leave it out
