09 February 2022Recipe for Traditional Old-Holland Dutch Poffertjes
The favorite of every child and secretly every parent too: delicious, soft, sweet poffertjes! Did you know that this is a truly Dutch treat? And it’s old-Hollandish too, because poffertjes were already enjoyed at fairs and carnivals back in 1734.
We love them with (lots of) powdered sugar and a dollop of butter. Boerin Gerdien from FarmCamps De Oostermaat and her family enjoy them regularly too.
Have you been to FarmCamps De Oostermaat ? You may have already baked poffertjes with Gerdien, as she loves to show how to make this delicious treat. We are happy to share the ‘secret’ recipe with you so you can try it at home and enjoy them with the kids.
Here’s what you’ll need:
- A mixing bowl
- A poffertjes pan (one for the stove, or you can use an electric version)
- A whisk or mixer
- A piping bag or squeeze bottle
Ingredients for 6 generous servings:
- 250 grams of flour
- 1.5 teaspoons of baking powder
- A pinch of salt
- 300 ml of milk (fresh milk from the farm is the best)
- 2 eggs
- Butter to grease the pan
- A whole lot of love
How to make them:
- In a bowl, mix the flour, baking powder, and salt together with a whisk.
- Add the (fresh) milk and eggs and mix everything until you have a smooth batter. Don’t whisk too hard at first, or the flour will fly everywhere.
- To easily and neatly pipe the batter into the poffertjes pan, use a piping bag or squeeze bottle with a large enough opening to portion well.
- Heat the poffertjes pan over medium heat or turn on the electric poffertjes pan to warm it up.
- Grease the pan with a little melted butter so the poffertjes don’t stick.
And then there’s only one thing left to do: enjoy and indulge! True farmer poffertjes are made with freshly gathered eggs and milk straight from the cow, and homemade butter. But for that, you’ll need to come stay at the farm. At least you now know exactly how to make them!
